Owners Gary and Jami Steinberg introduce a unique blend of spicy, natural, and freshly prepared dishes to the Chicago food truck scene with their flame-grilled chicken starring as the main attraction.
Grill Chasers, a Schaumburg-based food truck, will begin servicing the Chicago metro and suburbs areas with their signature flame-grilled chicken recipes done four ways: Skewers, Sliders, Wings, and Wraps. Fresh and bold marinades and dipping sauces, called “Chasers”, take the flame-grilled dishes in unique flavor directions.
The Grill Chasers food truck blends fresh and inventive ingredients into their sauces, marinades, and vegetable dishes, of which many are made from scratch every day. The menu at Grill Chasers includes a choice of four styles of flame-grilled chicken preparation: skewers, sliders, wings, and wraps. The natural flame-grilled chicken is just the beginning of the flavor layers. Lively fresh marinades and chasers like citrus-infused flavors that meld with chili peppers and cilantro in their Olé Bird marinade take it in a Southwestern direction. A mango salsa on the side takes it even further. Their Chicago Bird is a fresh herb-based marinade, accented with fresh herbs, peppercorn, shallots, olive oil and a splash of lemon for full-flavored textures when combined with the flame-grilled chicken. Dishes also take on an outdoorsy barbeque flavor with fiery or sweet B-B-Q sauces.
Not to be outdone by the flame-grilled chicken, Grill Chasers will also provide a grilled vegetable skewer and side orders that include a home-style mac ‘n cheese dish with layers of jalapeños and fresh heavy cream, side orders of chipotle fries, and a cabbage-kale coleslaw side order dish.
“There is nothing as good as when a chicken is flame-grilled,” says Gary Steinberg, Grill Chasers co-founder and chef. “You could just stop right there and have a taste sensation you’ve never experienced. But when you add our unique blends of fresh sauces, marinades, and our sensational chasers, you are tasting something special for the first time. And hopefully make it a habit,” he adds.

Their goal is to start by providing lunch and dinners in suburban location office buildings, apartment complexes, and streets close to train stations. “When I worked long hours downtown and came home on the train, I always thought it would be so nice to be able to pick up flame-grilled chicken dinners on the go right near my train stop,” recalls Jami Steinberg when first developing the idea for their food truck business. “We are also excited to share our chicken at beer gardens and festivals for fun experiences,” she adds. Grill Chasers can also cater events, and their website makes it easy to contact them for your catering needs.
This is the first food truck for longtime Chicagoans Gary and Jami Steinberg. As keeper of the flame, Gary has had a way with flame-grilling birds for over two decades. But his career on the trading floor always delayed his move into a full-time cooking business. Until now. Gary and Jami have traded places with their corporate careers and have entered the food truck business with a focus on the flame and a thing for building combinations of flavors that are signature Grill Chasers cuisine. “This is Gary’s dream to not only bring the sensational flame-grilled chicken flavor to the streets of Chicago but to do it on the suburban streets and add to the growing fun and flavorful street food experience outside the metro area,” says Jami.
